Morning Tea Muffins Recipe!

May 24th, 2011 by Anthea | 6 Comments | Filed in The Magazine, food

Good morning girls!

As you know… I just love to cook! Creating (and taste-testing!) the recipes for the cooking pages is one of the BEST bits about working at GP HQ!

Today we all got to bake for a cause – we held a Biggest Morning Tea in the office to raise money for the Cancer Council. It was totally scrumptious :) Amy baked some yum-tastic Mars Bar slices and I made some Pear and Rhubarb muffins… fancy!

This inspired me to share one of my favourite Morning Tea recipes… I call them Berry Blast Muffins! Packed with berries, yoghurt and oats, they make a totally tasty snack. Why not whip them up this weekend, or hold your own Biggest Morning Tea? Check out ‘I Heart Helping’ in our June issue for more info, or visit www.biggestmorningtea.com.au to find out more!

My Berry Blast Muffins!

Are you getting hungry? Here’s the recipe girls – get baking!

You’ll need:

The Ingredients

  • 2 cups of self-raising flour
  • 2/3 cup rolled oats
  • 2 eggs lightly beaten
  • 200g of strawberry yoghurt
  • 2 mashed bananas
  • 1 green apple, grated
  • ½ cup of honey
  • 80g of melted butter
  • 1 cup of mixed berries (fresh or frozen)

How to do it:

1. Preheat the oven to 190°C or 170°C for fan-forced. Line 12 non-stick muffin holes with paper muffin cases. Sift the flour into a bowl and stir in ½ of the rolled oats.

Step One

2. Add eggs, yoghurt, bananas, apple, honey and butter and stir until only just combined. Fold in the berries.

Step Two

3. Spoon the mixture into the muffin cases and sprinkle remaining oats on top. Bake for 20-25 minutes or until a skewer inserted into a muffin comes out clean. Put on a wire rack to cool.

Step Three

Tip! These very munchable muffins can be eaten on their own or cut in half and spread with yoghurt or honey.

Happy Baking!

Cool Cooks!

September 13th, 2010 by Anthea | 7 Comments | Filed in Contribute, food

Heya Girl Powerettes!

Did you catch Junior Masterchef last night? The contestants were totally talented!

Tayla’s goat’s cheese wantons and fennel salad looked so scrumptious that I almost headed back into the kitchen for a second dinner! Sam’s French-inspired quatre-quarts cakes, with tempered white chocolate, strawberries and raspberries looked totally yummo too!!!

I LOVE cooking up a storm in the kitchen and sharing my fave recipes in the mag. This coconut ice I made for the July issue was one of my faves! Pretty, pink and oh so sweet!

My Coconut Ice

How about you girls, are you mini-masterchefs in the making? Do you think you could rival the contestants? If so – email in your fave recipes and pics of your cool, culinary creations to girlpower@next.com.au – we’d love to see ‘em!

Have a mouthwatering monday!

Hey Girl Powerettes!

It’s Mother’s Day on Sunday! Yay! We hope you’re planning to pamper the mother figure in your life – whether it be your mum, stepmum or maybe your aunty or grandma.

No need to buy uber-expensive gifts – a nice card or a crafty creation goes a long way in showing your mum how much you heart her. The May issue of GP has a mother’s day special with some great ideas, including the cutest cookie recipe! Don’t forget to check it out, it’s on sale now!

Speaking of cooking, Demi Lovato usually spends mother’s day in the kitchen with her mum Dianna. They like to chat away while they cook up yummy fajitas and salad.

My sis and I think Demi is definitely onto a good thing! We want to give our mum a break though, so we’ll be cooking up a delicious dinner for her while she relaxes. How about you Girl Powerettes? How are you planning to spend Mother’s Day?

Snack Attack

February 3rd, 2010 by Amy | 7 Comments | Filed in food

When the clock hits 3pm-ish in the Girl Power office, our tummies start grumbling. We bet it’s the same for you! You probably need an after-school snack STAT to stop your stomach making more noise than an angry lawn mower.

But what’s a girl to munch on when she’s feeling ravenous? Comment or email us (girlpower@next.com.au) with your best snack recipes and tips!

Here are some of our favourites:

Mmm Milkshakes

Milk is a great hunger-buster because it fills you up fast and it’s packed with good stuff like calcium for healthy bones.

Try

  1. Two spoonfuls of Milo, one cup of milk and stir for a chocolatey treat.
  2. Whack a banana, a dollop of honey and one cup of milk in a blender.

Brilliant Biscuits

Top a cracker or rice cake with vegies, fruits and spreads for an easy-peasy snack to stop your tummy moaning and groaning.

Try

  1. Vegemite and sliced cheese.
  2. Cheese spread and sliced apple.

STILL HUNGRY?

Try

  1. Munching on a bowl of cereal – it’s not just for breakfast!
  2. Popping up some homemade popcorn (ask Mum or Dad for help)
  3. It’s a classic for a reason, so whip up some cheese on toast!
  4. Yoghurt topped with sliced banana or berries. DELICIOUS!
  5. Making your own ‘Scroggin’ with mixed nuts and dried fruits.

ARE YOU STILL HUNGRY???

You can’t be!!!

Did you know your body can sometimes trick you and make you feel hungry when you’re actually thirsty? Before you chow down on every edible item in sight, sit down and have a big drink of water.
